The Ultimate Easy Egg Muffin

1 cup finely chopped broccoli
1 finely chopped red pepper
½ medium yellow pepper
8 large eggs
¾ cup shredded Colby cheese
1 tsp salt
½ tsp ground black pepper

Preheat oven to 375 F. Line a muffin tin with paper liners. Spray muffin pan with cooking spray.
Saute peppers and onions in a skillet over medium heat until tender. 
In a large mixing bowl, crack eggs and lightly beat with a whisk. Add salt and pepper and whisk to combine.
Add sauteed vegetables and cheese to whisked eggs and toss to combine.
Fill each muffin mold egg mixture so it is ¾ full. 
Optional: add extra colby cheese as topping. 
Bake for 20 minutes and/or until muffins are lightly golden 
Allow muffins to cool in a pan for about 5 minutes before removing
